how do you get those sharp close pictures with the blurred background? do you just blur it out?

My guess is they used a low aperture. Check out this video for a pretty good explanation on depth of field.

Yeah you will need a lens with a low F stop to get that effect. Since you're new, I highly recommend you check out the Canon 50mm F/1.8 lens. It's only around $120.
