All u can eat hot pot yesterday (in china), no lobster so i made it up with lots of beef

Cooked turkey using the newly purchased (Black Friday sale) Anova Sous Vide today. Wow, perfect moist breasts. Everybody was impressed. Tomorrow, prime rib steaks. I'll probably get sick of using this thing in about a week or so, but damn........... fool proof. I got the wifi version, so just monitor what's happening with the phone app and it's as good as gold. What I like about the setup is that it frees up the stove/oven. I now have a designated spot for the pot and sous vide.

Having hot pot again on new year even. i hope there are actually enough food I can buy. Went to T&T yesterday and literally most of the Hot Pot meats and veggies are gone. Even the drink isle looks pretty empty......

You break it up and bag the legs and breast separate, don't think you could vacuum seal a whole turkey even if you wanted to. That way you can also cook white and dark to different temperature. Then you just brown it on a cast iron with some oil.

I haven't done a turkey yet, but I do chicken all the time and it's awesome.

Not white as some of you guys out on the beach for the first time - blinding everyone, gulolol.

Mine turned out looking darker because I added lots of spice/rub. Some people brown it on a skillet, but that ruins the moistness that the sous vide process is famous for.

The fact that it looks so different is part of the surprise - when the awesome flavour and moistness hits you. One expects turkey breast to be dry and bland.

White meat when done right is not bad at all. Don't judge a book by its cover..... in this case, coverless. That crispy skin doe.......... I want to go buy only the skin just to do that part, lol. Spicy, crispy skin with gravy over rice, ftmfw!

lol, this year was legit one of the worst Christmas dinners I can remember having...

I'm not a "Foodie" though, so not really a big deal to me. But since it's the topic of the thread, I'll talk about it. As our tradition every year, I go eat out with my family and cousins at a Chinese Seafood restaurant on Christmas day. We take up 3 round tables and order what I consider would be pretty expensive dishes. But this year, we tried out a new restaurant and while the food was alright, for whatever reason, my mom who was in charge of ordering the food (as she does every year) ordered all these terrible dishes. Or maybe the set was a super basic one. Not sure if my mom cheaped out or did the restaurant just have a bad dish set. We're using our late grandma's money to fund these family meals so doesn't make sense to cheap out.

No lobster, no crab, didn't get that fancy jellyfish dish that's usually served at the beginning. We didn't even get soup.

Like I said, not a big deal, I've had a lot of opportunities in my life to eat lobster and crab for special occasions. But it was kind of weird this year that the dinner was so below what we normally have for our annual Christmas dinner.

I want to know the restaurant name. Once we went out for Xmas dinner and when we book the table we specifically told the restaurant we wanted to change a few dishes in the set menus and order a better soup and we are willing to pay for the extra price. Manager on the phone said no problem he will put it in.

When we got to the restaurant we again mention about the changes we made just to make sure. Again we were told it was done. When food comes it was just the same set menu and the change we requested wasn't done and same with the soup. My sister wasn't too happy but the manager assure us that we won't get bill for the upgrades since it wasn't done. But when bill comes we were charge for the upgrades and the soup. So now the manager deny any of that and claims the dishes were upgraded and the soup was change (so he did a total 180).

There is no point at this time we just pay and no tips were added and never went back to that restaurant again. Is kinda of sad coz we would at least go there 6 to 7 times a year and of course dim sum as well. They basically lost a customer over $50 and we made sure we tell everyone we know not to go there.

not judging. Just generally curious. The sous vide has mesmerized me for years and as I’ve always been one to cook low and slow. It’s just the next step. Although this year I’ve been perfecting my cast iron cookware. It’s taken about 7 years but I’m finally happy with the seasoning I’ve created.

lol, I think most of the "kids" can't read Chinese, and going by the English names can sometimes be a crapshoot cause dishes aren't always translated properly.

I think it's some Asian culture hierarchy thing, the uncle/aunts discuss the set meals and my mom's the one that actually makes the order. Anyway, now that I think about it, I recall one of my aunt wasn't very happy about something and wanted to go to the manager to discuss something, but my mom told her it was ok, it's fine. Not sure what that was about, lol. Maybe I should have followed up, but I was busy talking to my cousins and forget about it.

But still, I don't think that would have been related to why the whole meal set was pretty lacking. I don't think I've ever went to a Chinese Seafood restaurant for a special occasion and not have Crab and/or Lobster in the meal.
