I meant the $1.50 for tea plus personal pot is standard in Downtown.

Oysters, I know it's definitely more flavourful to have all the natural juices in the shell, we used to do that and our shuckers are pretty good but with cheap $1 oysters. Two people have to plough through about 700+ oysters in 2-3 hours, there's sometimes bit of shell and/or sand in them so to avoid that potential problem we give it a quick rinse, that said we also don't powerwash the oysters so there should still be juice still in there ;)

Brought my cousin and her friends (all from Edmonton) to the Robson location for lunch yesterday as they were craving for sushi...
Everyone enjoyed the food and service!:)

I totally disagree with rinsing them at all. Even if it's in a rush.
Maybe you have an extra cook you move to oyster duty when it's cheap oyster hour (or night?).

Perhaps it's unfair to compare with Coast, but if you are really moving that much volume, then it sounds like you've got some actual pros on hand.
I'm pretty sure when they are slammed during happy hour, that they still don't rinse. It's just about technique.
And while you can't get every single oyster perfect, just like everything else in the kitchen, there is always a bit of wastage.

My suggestion,
Don't rinse, only send out perfectly shucked ones.
Keep a "discard" bucket of the problematic oysters, ones with the shells in them.
Rinse those off at the end of service, and recycle them into something else like fried oysters? While I'm sure "per oyster", they would cost you guys more for those fried oysters.

However, there are some small benefits:
- All your shucked ones go out perfect and correctly (without rinsing).
- You have a stash of nicer oysters to fry.
- You can fry them and sell them as a "premium fried oyster special". Once they are gone, they are gone.

You increase quality.
Recycling to minimize wastage.
And you have another early bird incentive, premium fried oysters.

Not that I should be telling you how to run your own restaurant

At broadway atm. Sapporo ...8.50....yessss!

edit: Just got home and a few suggestions I would like to point out:

1) Hurricane fries are awesome, but aside from the first two or three fries, the rest had no seasoning on them (seaweed?)
2) Food kept coming, but our empty plates stayed also (although it was slightly busy)

Overall, I enjoyed it. Will be back friday :drunk:

You can always ask for more sauce ;)
Confirmed, there is one hidden (well not really secret cuz it's written in the menu to prevent allergy concerns) shiso cream cheese wrapped stick that is :sweetjesus:

What time does the Broadway Ebisu open until on a week night?
Also is the $8.50 pitcher deal still on?
Posted via RS Mobile

Obsideon 08-21-2013 09:05 PM

For Broadway, on a weeknight they usually close around 11ish, last call is 10:30pm.
and YES the Sapporo pitchers are still $8.50! :fuckyea:

FYI there is a Red Tide warning on oysters right now so be careful eating them. Ebisu won't be serving them for the next few days (at least) until they are perfectly fine to eat again. If you are craving some, get some off-shore oysters, Kamei Baru has a delicious few different kinds that are safe to eat!

hamsup 08-22-2013 08:24 AM

skiipi... you don't even drink ! lol

xXSupa 08-31-2013 12:01 AM

Had dinner with a few friends at the Richmond Ebisu earlier today. Great food, great service! :)

Just wondering, are there still discounts given out for Revscene members?

chin3se604 09-07-2013 01:00 AM

just came back from robson ebisu, love the ambience

xXSupa 09-20-2013 11:49 PM

Was at the Robson Ebisu with a group of almost 40 people for a friend's birthday tonight.

Deon, I think I saw you, but you looked busy, so I didn't disturb you.

Once again, loved the food and everything :)

Obsideon 09-21-2013 12:08 AM

It was pretty busy earlier but I don't mind it at all you should have said Hi! :D

Yea P. Diddy's brand, now available! It's pretty darn smooth (self-witness :drunk: )

jtrinh 09-21-2013 10:44 AM

I was at the Broadway location last night.

The food was good but came out at a snails pace. Same with our pitchers and glasses of water..

Had a pretty good time though and the shots on house made up for the slow service!

Mike Oxbig 09-21-2013 11:52 AM

i ordered the thunderfries to share and for the 3rd time i didnt get the cheese stick :okay:

Does the Broadway location have $1 oysters and $0.40 wings? What about $8.50 pitchers? Planning to go next Monday.

Is the Tsukune Don made with real chicken? It tasted like fish and was really soft and mushy...

Obsideon 11-12-2013 07:42 PM

The Tsukune Don is minced chicken meat so it's really soft. The fish taste must be from the sauce, we use yakitori (BBQ) sauce mixed with some Udon soup (which contains a bit of fish stock)

but Yes it's real chicken :)
