Don't forget that you see only the parts where they suck or do exceptionally well. Nobody wants to spend an hour watching 4 hours of food getting cooked and going through. There needs to be excitement and perception of complete and utter failure to grab attention and retain viewers.... haven't you noticed that ramsey's been nit picking on them just so he can yell and keep ratings?
