Does anyone know how to remove text on a JPEG or is it not possible?

Photoshop, or your favorite similar software... just have to edit it out carefully, like you would for anything else you want to remove.

Ah... I ordered a convocation picture of mine just now. Was just wondering if I could have removed the hot pink SAMPLE text in one of the proofs, haha.

Kid's is a single kid. The grad photos belong to or are of his kid.

If he wrote kids', then it would be grad photos of multiple kids.

I back-leveled to the root Castleman site and started browsing some of his work, particularly the astrophotography section. I've seen plenty of star and nebula pics before, and after a while "if you've seen one, you've seen'em all", but this little collage really blew me away for its creativity:
