When you're in Orlando you can go to the Kennedy Space Center

Other than Disneyworld and the nearby surrounding area, I didn't find the city all that interesting. Like OptimusCrime mentioned, Kennedy Space Center might be interesting.

In Miami, Miami Beach is probably good for people watching. If you're into wildlife, check out the Everglades and do one of the airboat rides to check out some alligators. If you've got a day or two to spare, drive down the Keys (all the way to Key West). It's a pretty scenic drive. If you're into snorkeling, try some snorkeling in Key Largo and Key West. They also have scuba diving as well.

The Bahamas wasn't all that interesting for me. I did a snorkeling trip while I was there. (it was a stop on a cruise) I think they just send people there for the cheap booze and duty free stuff. Maybe check out Atlantis while you're there? I can't think of anything else in particular that is interesting there...
