1. My childhood chinese dinners was always spent at a place on Kingsway at Earles called Shanghai Paramount. (no judgement we are white as Casper) They had a crispy rice dish that was covered with a sauce at the table. It sizzled leaving crispy and wet rice. Shanghai is closed. Anyone know the dish and where to get it?

do you mean heritage style? if so, some of the BC Housing heritage renos downtown use Rejuvenation in the US...but tbh i've seen VERY similar stuff used on those buildings at home depot for like 1/10 the price and probably equal in quality. aside from that take a trip out to any of the showrooms of the local lighting suppliers and see what they got.
