Is it normal for Shanghainese to put ginger on to the soy sauce though? Or is that a Twanger/Cantonese/Some sorta Asian thing?

A bit of that vinegary taste is what makes the XLB so good! How can someone not dip their XLB in the dark vinegar, even if it is just a little bit?

Just personal preference.

I hate vinegar in general, especially the smell of it and when used by itself. It's probably similar to some people and cilantro, although I've read that is genetic.

I can tolerate it in things such as ketchup and certain hot sauces since it's masked by other ingredients, but things such as salads with vinaigrette dressings or salt and vinegar chips are no go.

Dipping XLB in vinegar would completely ruin it for me. I'm happy enough eating them as is.

p.s. i like their 鍋貼 more than their XLB but thats because im more a 鍋貼 guy to begin with.

The problem I find with XLB spots in Shanghai is consistency. Within the same steam basket, there can be a few that taste good and some that taste so so. And I’ve got several spots as my wife is big fan of XLB and that’s all she wanted to eat as breakfast.

We have even hit same spot on different days, same problem.

That all ended when we tried fried bum. The texture is amazing. Crispy on the outside and juicy on the inside. The best part, it’s super consistent. We hit the same spot 11pm after karaoke and again at 11am after we woke up from hangover. Same incredible taste.

And just when we thought it couldn’t get better, our SH friend said “oh, you like this? Let me bring you to the good spot for these”. Omg, that bum was 11. A while in the wall place. But damn, those bum are something else. The same place served XLB, while overall consistent, they weren’t as good as others.

Could be. But the spot seems famous for that fried bum. Two of my completely unrelated Shanghai friends knew the same spot as their go to place for fried bums.

The dark vinegar brings out the taste from the meat and the juice in the XLB, and that's what makes them so good! I think of it like adding salt to (unsalted) fries, or adding sugar to my (HK) milk tea. It just brings out the taste, and without it, it ain't the same.
