It's like the difference between using a dual core Athlon II CPU or a Core i7... They all have the possibility of running the same stuff, but one will be much faster than the other. For me, the speed is important. For her, she wouldn't even know what she's missing out on.
There are certainly some apps that won't run at all on a much slower device. I was testing out cheap tablets the other day, and Angry Birds was HORRIBLE on most of them. That's actually a good benchmark, IMO. If it runs Angry Birds smoothly, it's going to perform sufficiently for most tasks. Just be prepared to wait here and there for apps to load, since the memory is lower.
