Ended up cooking Jumbo tiger prawns in a Franks garlic sauce and clams in a white wine sauce for dinner tonight

How'd you use the lime in the tuna carpaccio?
Is that cilantro I see in your parsley salad?

For the chips you just spread a layer on parchment paper, throw it in the oven at 200 for about 1-2 hours.. and wait for it to dehydrate, then you crunch them up.

I used juice of 1 lime, 1 orange, white balsamic, avocado oil, then just topped the carpaccio, the citrus slightly cures it.

Yes, had cilantro, parsley, basil, dill. Tossed it in white balsamic and white truffle oil

no prob! Here's a tip: adjust the sugar and lemon juice to your tastebuds. Add or subtract to your liking -- all my measurements are always just rough estimates.

So I just tried making a variation to test it out, and getting the sugar right is the hardest part. You can totally substitute whatever flavour you like, but you'll have to add or subtract sugar.

To try it out, I just made an espresso version using 2 shots of Nespresso Dharkan, and it required ALOT more sugar and condensed milk. It was too bitter without it. I also added brown sugar to the graham crust.



I didn't have any coffee Jello, but that would've gone well with it!

Did a small pot roast for a friend and his wife. Turned out excellent. Instead of my typical BBQ rub i make, i used a packet of spicey taco seasoning before searing it. Then used a shitaki mushroom beer broth as the roasting liquid.




Cod and Shrimp Tom Yum spicey rice noodles.


Gochujang noodles with bulgoggi beef topped with bean sprouts, spinach and a raw egg yolk.

Haven't done too much lately. smoked a brisket a few weekends ago. Took 14 hours.

point.. super tender

flat.. juice flowing after resting for 4 hours

its been a while.. so figure i post a few

Bulgogi beef on gochujang friend noodle topped with bean sprouts, wilted spinach and a raw egg yolk



Shrimp and Cod Tom Yum noodle soup with enoki mushrooms

kimchi dumplings with sliced ribeye stir fry

Proschuitto and ground beef meatballs stuffed with cheese

Finally got a new grill...first time in 8 years living in places that didn't allow it. Made some yogurt and mint marinated lamb chops with grilled accompaniments. Wife made a killer tzatziki like sauce.
