Picked up my summer wheels from G5 recently, 15x7 +38 Kosei K2R.
I can't wait to throw them on, but I haven't decided on a tire yet.
I'm leaning towards the BFG Sport Comp-2 (UHP Summer) or Kumho 4X II (UHP All Season)

Lol you aren't wrong! They are reasonably priced and go on sale frequently, not too heavy (19.0lbs for 18x8.5), hub centric, good offset for mk7, and takes OEM bolts and caps. I needed winters pronto so these were convenient to get.

As tastic said, Neuspeed wheels are unbelievably well-matched to VWs and Audis and are priced very well for how light and nice they are. I had the RSE12 on my GTI, and brought them over to the R as my winters. The RSE10 specifically, goes very well with the MK7 lines.
I probably would've went with OZ Leggera HLTs if they came in 18 x 8.5" and didn't require hubcentric rings and another set of bolts.

When do you think your car is going to resemble a complete car again Jackp0t? I'm really excited to see it this summer. I think its going to be stunning.
