Lai Yuw Lobster (Chinese style Lobster with cream sauce)

Hey guys, hoping for a bit of help here.

I'm making this tomorrow but I'm still not quite sure how to approach it and all the ingredients I'll need.

I remember my aunt making this ages ago, so I've got some idea on where to start. But I am hoping to get a bit more info and it seems my google-fu is weak.
Any help or suggestions guys?

What is the actual chinese dish name for it ? I always thought it was called Sherng Tong Lobster Yee Mein

In phonetic for cantonese it is pronounced "Lai Yao Long Ha" and the noodles can differ and can be "Yee mean" (like the ones from wonton noodle soup) or others.

"Sherng Tong" would be the clear broth sauce.
