I buy whole half cow and also make some pickled veggies between families and friends. Then my First Nation buddies would bring me wild caught from time to time. I’ve always struggled with fridge space and either have to cut my usual groceries when it’s season.

I was with 3 fridges and freezers. Note that one broke down and another one is near its EoL, instead of just buying multiple units, I thought I’d just get a walk in unit for the heck of it.

My friends parents bought a place that had one, supposedly the previous owners were big on moose hunting. It was such a PITA they ripped it out and just put in a normal fridge + storage. If something as essential as a fridge dies I want to just go buy a new one and be done with it, not have to worry about calling in a specialist and ordering in parts. But that's just me.

It's probably not incredibly huge like one in restaurant or supermarket. But the idea is to add a walk-in fridge with 2 doors, one large door to bring whatever in on the side, and a glass-door (like the one in supermarket) facing another side with shelves for easy pickup in my garage... something like this:

From my buddy down in the US, he says any walk-in fridge would use commercial grade equiments. Only problem is that they are louder. But it's generally easier to maintain and more robust than domestic solutions as they care more about fitting everything into a certain size package.

To be frank, that's a stupid idea.

There's no reason why anyone will benefit from a walk-in fridge unless you have a family of 10 who eat frozen meals 24/7 or live 100 km away from the nearest grocery store.

My sister in-law lives in Anmore and they can fit a week worth of food and drinks for their family of 5 with their 48" fridge.

Or just use that money to spend on daily spud delivery.

Everyone's need is different.

As I said, I have the need to store a lot of stuff. I don't need them all the time, but I do need them for about twice a season or so and each time for about 4days. Plus those days that I just get my shipment of half a cow.

So, it's not about hoarding stuff in the fridge just so that I can go once every 3mth for grocery. It's about addressing the inconvenience I'm having once for all.

walk ins have a bunch of wasted space that you have to cool because you need space to walk in. Compressors on walk ins are a lot bigger and produce more heat. Ours are mounted outside. Do you really want compressors mounted outside your house. Installation is also not going to be cheap. Compressors also do fail and when they fail it will cost you thousands of dollars.

I was trying to find a fridge that does -20C so that I can turn Costco Atlantic salmon filets into sashimi (not sure if that’s even a good idea as besides freezing parasites there might be other issues with the fish) so I asked around and nobody does -20C not even a 50k subzero unit.

So I guess my dreams of doing my own sashimi are dead

I watched that video yesterday and went down the rabbit hole.

It seems like farmed salmon that has been flash frozen and then kept frozen for multiple days is 99% safe to consume for sashimi. As long as the fish has been frozen for long enough, the parasites will die.

I have a chest freezer that is currently -18 degrees. It's some crappy Danby one I bought from Costco on sale. I'm sure there must be consumer available ones that go to at least -20.

And my small understanding of it is that the farmed stuff is ALL flash frozen and then defrosted on site (at least at Costco) so, in theory, it's safe to use as sashimi.

I have a very sensitive stomach and have ate Costco sashimi multiple times without issue. Choose a pack that doesn't look sus and you should be fine.

Dipndots and minimelt icecream freezers go down to -40F. Maybe find a used one.

You guys are amazing. I didn’t even know their frozen farmed Atlantic is already sashimi ready. I was gonna buy the defrosted ones from their meat/seafood section and try to do that.

I'm pretty sure all salmon is flash frozen at some point unless it specifically says never frozen.

BC and Alberta guidelines both say that raw seafood should be stored at -20C for seven days (and some other guidelines for lower temperatures that requires nicer freezers us normies wouldn't have at home).

However, Alberta says fish that was aquaculture-raised and fed formulated pelletized feed (which as far as I know is practically all farmed salmon) do not need to be frozen.

I think as long as you're buying the frozen and farmed stuff from Costco, it should be ok.
