3400 tax-in for 2*JFK-EZE in AA J. Old J seats, but considering it's the price and being a direct flight... it's an amazing deal. And I can live with angled flat seats.

I believe you can ask to get off in Vancouver. I did a flight from SEA to LHR a couple years ago, it cost something like $400 and return flight was LHR - YVR - SEA. When I checked in at LHR I told them I didn't want to continue to Seattle and they allowed it. I'll call AC and see what they say.
Do not call air canada!! All you do is tell them in CDG that you would like to short check your bags to Vancouver. Be aware the airlines are not happy when people stop on the way back but it won't be a big deal if you only do it once. Definitely don't call air canada in advance though. Posted via RS Mobile

I have done it many times with my work flights. It has something to do with the airline's planning and the price they offer. So we often skip the last leg that brings us to some very weird places hundreds of miles away. AC/UA are usually not happy with it, but the agent that my company work with always does this to offer the best price possible.
At CDG, just tell them you only want your bags checked until YVR (the tag will show as such) and you are good to go.
You guys are correct, airlines don't like it and I believe the term they use for skipping a leg is hidden city ticketing. You shouldn't skip a flight on the first leg because depending on the airline they can cancel your return leg. In past I've either flown with carry on luggage only so they can't do much or I've asked to have the baggage checked to YVR without any issues.

Yeah... airlines hate it. If you are booking on a personal level, I'd say just do it once a while.
Corporate is whole other animal. Too much stuff going behind the doors.
