Well first off, new to the forum, so hows it going everyone.
Now, to the question. I want to build a new project car, but start from stock with a bit bigger then the normal displacement. The goal is to keep it NA.
Also keep the budget as low as possible as it would just be a Sunday driver.
My ideas are to look at either a: nissan, lexus, or bmw... would be open to other ideas too. Maybe even go old school muscle.
Before this I had a crazy supercharged 3.7l and looking to cool down with any FIs. All motor from now on.
What hasn't Killed me, has made me more tolerant of RS!

What kind of budget are you looking at? If it was me and I wanted some NA fun, I would look at a Miata or CRX that's already had some decent engine work done. Not big displacement, but in return you get the potential of 9000rpm and great sound. AP1 S2000 is also a fairly inexpensive way to 9000rpm and a great chassis. AP2 makes more useable torque and the chassis is a little better, but the AP1 is still a great car.
But since you mention you want bigger displacement I can think of something like an E36 M3 or a 330ci with the M-sport package. I'd also highly recommend a 135i or 335i, but of course they're turbo and I know you're hoping to stay NA. Fantastic power band though, tons of torque and good top end.
I don't really know much about Nissan or Lexus, or older muscle cars.
Build whatever the fuck you want to build. Who gives a shit what others think.
You don't even say what you want to use the car for, just that you want to drive it on sundays. Does that mean Leisurely sunday cruises down hwy1? Does that mean you want to take it to AutoX? Or canyon carving? Or just cruise down robson?

Lexus (IS300, IS250)
Toyota (MRS, Celica all trac)
BMW (E30, E36)
If you wanting all motor then a lighter/smaller car is ideal. A Miata would be good for this. Has lots of potential and cheap to build and maintain.
Lexus, BMW, and Nissan (the cars I mentioned anyway) can be rather expensive to maintain if they were not kept up before you got them.
At the end of the day you just want something that you enjoy working on and driving.
foxbody mustang. since you're looking for a project anyways, start with a clean and straight 4 banger. all the v8 parts that you want for the car will bolt right up. endless engine choices for the car too. you could go with your own built motor or swap in a termi cobra motor or even a coyote 5.0L.

or you could just get the 5L, make it look and handle good and go from there
