I have one week of vacation left and I'm not sure where to use it. Any good ideas?
If it's Mexico or cruise do you guys think that's enough time?

One week is plenty in Mexico.. especially if you just fly the ~4 hours to Cabo or something.
I can recommend Riu Palace, had a great time there. Don't book the Santa Fe.. Palace is easily worth the extra $ http://www.travelbestbets.com/deals/los-cabos-mexico

cruise depends on where its sailing out of, and the travel time to get there and back.
7 days is a no, 5 day is possible.

Depends on what you like, but it was me for a week, I'd do a round-the-country in Iceland.
Airfare is crazy cheap out of Toronto (and you can get some deals for YVR-YYZ too). Once there, rent a car and hit the highway. It's incredibly beautiful.

With so many one-way flights out of YVR now, you can see a lot of international places in one week. In the past year we've done one-week trips in Tokyo and Paris. The key is to stick to one location, tour around and see everything the first few days then the last two relax and live like a local.
I just read AirTransat will be starting one-way flights to Rome now from Vancouver.
