Still gets converted to analog and then amplified. It's now just done in the headphones instead of the phone. That's for the air pods. For the wired headphones there is no difference except for the connector on the end.

Having a 5 hour battery life on the pods is crap. It's also going to suck when they run out of juice in the middle of a work out or what ever else you are doing.

There is no benefit to using a lightning connector for headphones.

If the biggest gripe about bluetooth headphones is that the battery life isn't very long, I think the hurdle usually is that people don't tend to plug it in for charge after a workout or commute. With the accompanied quick charging kit, I think it'll make the headphones a lot more practical.

That being said, the selling price is not worth it for me. I have a $30 Amazon pair that I've been using for a year and they sound just as good as the Jaybirds

Good news Beatz is coming out with a version of headphones with a 40 hour battery life.

Ended up just pre-ordering the Black in 32GB since I'll be using it.
