Figure out what city you are flying into, as you will likely purchase whatever sim cards are available in that country. Then check that it will work in all the other countries you plan on visiting.

If you fly into the UK, I recommend Three, the 12GB+ pay as you go plans include roaming in like 70 different countries and are valid for 30 days at a time:
