You haven't lived until you've tried Kinzanji miso. My BIL's aunt owns a farm in Japan. Their kinzanji miso is not sold in stores. They supply the Imperial household with their products. I tried their best kinzanji miso. One word. Heaven. It was a one time opportunity. A taste that cannot be forgotten. Miso is pretty basic, but mix in other ingredients (pickles, beans, etc.) and wow!! One ingredient that makes or breaks kinzanji miso is the addition of good quality Narazuke (vegetable pickled in Sake Kasu). Sake Lees. https://www.shinroku.co.jp/page/10 |

Update on Vegemite/Marmite: Couldn't find Vegemite in stores (checked famous foods and save-on-foods). Famous Foods only had marmite but I remembered I had a jar at home from 2014. Internet said it's safe to eat due to the high salt and low moisture content. I spread some this morning with butter and it still tastes good! Nice salty umami punch, tastes like the day I bought it. :lol |
Ever since going to Japan where I had sparkling Calpico (Calpis), I've been missing it. At an Okonomiyaki joint in Osaka, they made it from scratch. Not the bottled stuff. I realized how easy it was. They just added soda to Calpis concentrate. I finally made my own at home and I'm hooked. My new guilty pleasure. Soda Stream and Calpico (Made in Mexico concentrate). The Mexican concentrate uses actual sugar. Much better than the ones from US or even Japan which uses sucrolose or whatever artificial sweetener. Gonna look into making cocktails using spirits like vodka. https://www.calpico-usa.com/recipes/ |
hmmm i gotta try this... where do you buy calpis concentrate? |

Fujiya for sure has the Made in Mexico one. So does Sakuraya above Kim's Mart on Broadway. The beauty with the concentrate is, you can change the ratio to suit your taste. The 4-1 ratio is a little too sweet for me. |
