Depends on the miso. Aka Miso (red) is pretty salty, but shiro miso (white), not as salty. Amano Brand miso (local) is not very salty. It has been a local favourite for decades.......... maybe 100 years? People from Japan are amazed by it. It's "Inaka" miso (country side). Mix in sugar or Maple Syrup, and mirin (Japanese cooking wine) and spread it on salmon before BBQ and bliss!
You haven't lived until you've tried Kinzanji miso. My BIL's aunt owns a farm in Japan. Their kinzanji miso is not sold in stores. They supply the Imperial household with their products. I tried their best kinzanji miso. One word. Heaven. It was a one time opportunity. A taste that cannot be forgotten.
Miso is pretty basic, but mix in other ingredients (pickles, beans, etc.) and wow!!
One ingredient that makes or breaks kinzanji miso is the addition of good quality Narazuke (vegetable pickled in Sake Kasu). Sake Lees.
