inactivity allows for insufficient absortion of glucose after meals so more insulin has to be produced.

and i don't think this is it either. anerobic bacteria exist. like the ones that cause morning breath. since you don't breathe through your mouth when sleeping.
if anything, i'd say it has to do with osmosis. the sugar leeches out water from bacteria and they shrivel up
