Don't worry about the noise; it's not even high. I think the photo is great. You got good depth of field, excellent lighting, and a foreground (which many portraits lack).
It changes from 16 bit to 8 bit because you're saving it as JPEG. The extra data in 16-bit files are for printing; 8-bit is for displaying on web/monitor. You can print 8 bit files and they'll look great.
