A few that have interesting way of using ultra IMO (that you should probably be careful): Abel (it can skip through hadouken) Ryu's ultra/super can catch you in the air after you were hit, before reaching the ground and Ken's ultra can continue into combo after his super special if at corner.
The time taken for enemies to recover from ultra=special move combo pwnage.
