couldnt agree more.. just have to make sure your fat is hot when you add your batter. use a measuring cup with a lip spout so you can get it in there quick and back into the oven before the fat cools and you'll be fine
edit: oh and dont use butter for your fat because it burns easily so use oil/some other fat that can withstand the heat
