The Sony, Nikon and canon start up almost instantaneously. They are all good cameras, but the 4/3 sensor of the Olympus is something I'm not fond of. My friend shoots with it and does an amazing job though.

There is not much separating the Sony, Nikon, canon offerings in terms of image quality. The Sony has the best live view system of them all, but the viewfinder is smaller than the others due to that live view system. Canon has the most lenses to choose from, but some of Nikon's new lenses pretty much blow away everything except the Zeiss lenses for the Sony system. Ergonomics are VERY subjective. Go try them out and see which one you like best. I find the placement of the front dial on the Nikons are a bit awkward compared to the Canon & Sony cameras...you may feel different.
