The best Pho I have ever eaten in the entire world, period:

Indochine
88 Avenue de Choisy
Paris, France
75013

Every aspect of every dish was excellent - whereas Vancouver places have always, to me, only excelled at certain aspects and consistency often varied, this place hit the nail head on time and time again over 9 days.
In fact, on one day, I intentionally ate Pho at a mediocre restaurant followed by dinner at this place to make sure my judgment was not flawed.
