I will freeze a couple pop bottles/big juice jugs full of water and use that as extra cooling in the coolers. Yes it takes up a lot of space in the cooler, but it will stay cold/frozen longer than bags of ice cubes, won't leak, and you can drink the water after it melts.

I take 2 coolers when I'm camping. One full of ice for keeping beer & drinks cold, the other for food.
