There are better solutions than transcoding though. If you use MKV2VOB, it will remux the MKV files into MPG files that the PS3 will play, and Windows will stream natively. This way, you will not lose any quality. It takes less than a minute to convert a movie.
You can stream up to 720p over Wifi-G in my experience. For 1080p you'll need to have a Wifi-N network at least. I have my PS3 using ethernet and stream 1080p over Wifi-N no problem.
