Another sure way is sign up for Private Torrent sites since they tend to ignore these sites as compared to the large public torrent sites (piratebay, mininova, etc...). Or you can sign for for Shaw haha, during my years I have never been given an e-mail nor have I known anyone to get e-mails like what Telus gives out, they seem to protect your identity more than Telus does.

Well if you're downloading a pack of stuff, or pretty much any torrent with more than one file, and you have encryption on then whoever is protecting their stuff doesn't know what you're upping/downing, even if they have your IP. Thusly they can't ever say "we have records he downloaded this file" all they can say is "he downloaded this torrent, which contained this file, amongst others" which I doubt would hold up if they wanted your ISP to cut you off.

Yes, you are correct in that "seeders" are the people uploading the torrent, and "leechers" are one who download, but don't upload to at least 1:1. The thing is, as you download you also upload, so even if you delete the torrent you have uploaded at least a little bit.
The thing with torrenting/etc made easy, is that a lot of people get into it and get in trouble without knowing what they're doing.
