It works on 3 displays because the Eyefinity capable cards have 3 outputs on them. (2 DVI + 1 displayport).
Couldn't find a pic of 3 in portrait mode, but this guy has 2 20" in portrait and a single 30" in landscape mode.
Back to recommendations though for the OP, how about the Dell Ultrasharp
2209WA. It's an E-IPS screen so you've got the better viewing angles and color reproduction. It's $269 right now at Dell. While it isn't the cheapest monitor out there, it's a pretty decent value for something that's not a TN panel. This particular LCD also seems to get pretty good reviews.
