Use a tilt-shift lens. Take 3 shots - one with the lens shifted all the way to the left, one in the normal middle position, and one with the lens shifted all the way to the right. Then stitch the images together. That way you'll get a rectilinear panoramic image with no distortion to correct.
This was taken with the Canon 17mm f4 TS-E, 3 images stitched together.
You can also use specialized panorama heads like Manfrotto's 303SPH.
