That's because the video is trying to sell you something.
When you touch that spot, you're actually de-tuning the antenna and causing signal degradation. UI bars don't tell you anything.
It's a somewhat sizable loss, but this is significant only if you're in a weak signal area. Apple made a design decision to expose the antenna to conductive forces (you) in exchange for better reception when signal is weak.
Is this good or bad? Well, that's up to you. There's a lot of ppl who've never used the phone and otherwise dont' know what the fuck they're talking about commenting, though. That's good for a laugh.
If you want to see some bars drop where you're at, you can try putting the phone inside the microwave with the door closed as much as possible and hold that spot again. But again if signal is too strong, you won't see anything.
