Buri is a strange thing. It's not available on a consistent basis in Vancouver. The supplier would call us or the salesman would come by and tell us when the Buri is going to come in and if we would like a fillet. In our case, it's so similar to Hamachi I rarely ordered it. Sometime I wouldn't order Hamachi and bring in the Buri just for kicks. One thing many people don't know is that Buri and Hamachi are the same fish. Buri is the adult fish, Hamachi is the juvenile. There is also a name for a baby Buri that is smaller than Hamachi, about 30cm long, but I forgot its name - I just remember it as being very tasty!

I personally don't like eating Hamachi/Buri because 100% of the fish sold here is farmed and air lifted from Japan - this is why it's so expensive here. In Japan, Hamachi isn't very popular, and it's very cheap. The baby Hamachi is wild caught, not as fatty, and it doesn't have that metallic aftertaste that farmed fish tend to have.
