Check out the iphone tutorial section at
http://www.iclarified.com/. It has tons of info on Jailbreaking and Unlocking your phone. You don't necessarily need to Jailbreak, but if you want custom themes and home-brew apps, then you'll want to do it. Careful if you Jailbreak on OS 4.2.1, as last I've heard it will be a tethered Jailbreak, meaning you need to re-jailbreak every time your phone is turned off or the battery dies...
Just do your research and don't do anything you're not comfortable doing! Check out

As for good apps:
Angry Birds, Doodle Jump, Flight Control, Find iPhone, eBay... man there are sooooooo many. That's part of the fun of owning an iPhone, finding all the new and cool apps
