That totally depends on the day you go. Hamachi is flown from Japan on (IIRC) Tuesdays & Thursdays. Hamachi in a normal 4 degree Celcius fridge will start to spoil in about 3 days. We used to have a fridge where I worked that chilled down to about 1 degree Celcius, and the Hamachi would keep for 5 days. Also, the pinkish/reddish fatty flesh by the skin oxidizes quickly, so it should be wrapped in a special paper that helps delay oxidation. If a restaurant just wraps Hamachi in saran wrap, it will oxidized within a day or 2.
