Firmness, colour, texture, taste, cooked to perfection, etc.
Samples from a lot (random samples of 12 or so cans) get sent to DFO (Department of Fisheries and Oceans), along with a report on when and where the fish were caught, how long it was stored before it was processed, and how it was cooked (graphs of retort - temp over time and cooling down process).
Number one sockeye is "supposed to be" bright red and the meat is firm as a virgin's......... never mind, forgot my New Year's resolution. LOL. I'm trying really hard to find god. He doesn't take kindly to horny old men.
