I make a Quinoa salad that's probably the healthiest thing that I eat.
Quinoa cooks much like rice, I usually make a big batch at the beginning of the week and add it liberally to various meals through out the week. I like to make the salad the second day after it's been in the fridge over night.
I throw in pretty much every veggie I have in the house (it's really good with peas, red bell pepper and cherry tomatoes), and make my own salad dressing with balsamic vinegar, mustard, a bit of garlic and olive oil.
Serve with salmon.
It makes SUCH a nice light, and refreshing meal on a summer day.
