To all of the customers? None. Many places will serve real, fresh grated wasabi to customers who are connoisseurs and actually appreciate it, knew how to really eat sushi....at least, I did. If the customer ordered sashimi and nigiri suchi, then I would grate up some wasabi, but if there was any california rolls or BC rolls or dynamite rolls in the order I wouldn't bother...it would be a waste. Also would not serve it to people who drowned their food in soy sauce, or mixed in an insane amount of wasabi....that's just plain stupid.
