From what you posted it seems like she's comfortable around you. Go ask her dude, nothing worse than the "what if" feeling. Since she's the quiet type I think asking her privately would be "better". Nonetheless, good luck man. I wish my situation turned out like yours. She knew that I liked her and I already felt rejected before I even thought about telling her and all that bs.
