The Mi Quang noodles from vietnam, you're going to have to get a relative to send it to you through the mail! yea you can't find it here I don't think. I personally think regular rice noodles is better for Mi Quang.

I find that it's most Chinese people who change to rice noodles for bun bo hue. Must be a chinese thing! It's like how every chinese person needs the beansprouts cooked and noodles not spicy.
Most if not all vietnamese restaurants serve bun bo hue with the giant vermicelli noodles. My restaurant serves it in the medium sized noodles while the small sized noodles are what you find in salad rolls or grill meat dishes w/ vermicelli. It tastes a lot better with the medium sized noodles than the giant noodles, I don't know why restaurants always serve the giant ones.

Bun Bo Tai is just my restaurant's special. No one else makes it but it's the same soup. The only difference is we don't put in the grey sauce that is basic in bun bo hue. Instead of beef flank/well done beef, we use sliced rare beef you find in pho but we marinade it in Lemon grass sauce. People who love bun bo hue in general gotta try it.
