You pretty much want to keep everything. Have a lot of chests, and make sure you organize the items instead of just dumping stuff into a vacant chest. I have a chest for home decor, general crafting, potion crafting, precious metals, etc...

If you want to destroy stuff, throw the items into lava. I have a pool of lava in my castle for item disposal. I haven't played with the new features, yet, but maybe they included a way to destroy inventory.

EDIT: inventory can be destroyed (see below)
