This was my problem too. I used to only want watches with a display caseback, which Rolex never does (well I am told there are a few hidden models...).
I find the high end divers don't go display so I've stopped craving it. Most of the 1000m watches (not that I would ever go that deep) wouldn't risk it.
Big fan though lately of manual wind, and with a display caseback showing a balance wheel...mmmm
