Haha, I think you describe it perfectly.
If you're having trouble with some mobs, just try rolling behind the guy when he strikes at you and go for a backstab or a series of stutter strikes which makes the enemy flinch. You can usually get a combo of about 3~4 hits with a dagger.
If you're talking about the big boss in the building, the first time you encounter him, although it's beatable, you should run away into the door to the side. You'll encounter him later after you get a better sword and the game will tell you to do a jumping strike on him.
