Lion Server is basically Lion client with LDAP, VPN, file sharing, webdav, wiki, web, caldav, mail, ichat, podcast and XSAN services installed and activated. Some of these services may be useful is you wish to run your own email/calendar/file/vpn server for you home or small business. If its just you then the whole server part of Lion Server will be useless to you.

If you really don't NEED a server then I recommend exchanging your mac mini server for the entry level model and save $400. Then take $30 and buy lion server (if you want to try it out), take $50 and buy 8GB of RAM, and then take $120 and buy a 3TB external hard drive (from Costco bellingham) for data storage.
