Just keep playing games, try to find the smaller servers where there's only 4-6 players. I just rocked up my attack heli score by practicing hovering over conquest points. Don't forget that all points you earn while in vehicles count towards those vehicles' experience. So when I had my squadmate in the copter, we rocked three objectives, one started as neutral, the others as enemy-controlled.

So he just unlocked flares and is on his way to heatseekers, just by gunning with me. It's all about the servers you're on. And believe me, hovering above an objective is awesome practice with flight control.
Though TBH I have no idea how some guys are so awesome with jets. I just get...pwnd. I can't turn within a reasonable radius....ten seconds turning, and a second strafing. Not such a good ratio.
