sorry for the late reply, i'm getting my staff to find the best north-south tour company for you.
in your case, i'd go south-north cause the best way to end the trip is ha long bay, now one of the new wonders of the world.
you'll find the most culture in central vietnam when you hit hoi an and hue (viet nams old captial) where it's ancient, and has many types of great vietnamese food that isn't pho or lemongrass chicken.
nha trang, danang got some good beaches, good for stopping to relax and recharge. dalat is in the mountains, and has some very beautiful scenery and cold weather.
saigon is only good for partying, and checking out wartime stuff, like cu chi tunnels and such. they try hard to be westernized and it ends up like a bangkok 15 years ago. you should only go to saigon with the boys lol
i would suggest:
hcmc > nha trang > dalat > da nang > hoi an > hanoi > ha long bay
scottsman has probably been to more places in vietnam than i have, so hopefully he can give his input.
i'll get back to you on the recommended tour company this week.
