I suggest using the latest version of Handbrake and the "high profile" preset. It's a single pass using a constant quality compression that gives 2 pass like quality in half of the time, m4v container, h264 video. Also by default it saves the original untouched AC3 audio and also downmixed Dolby pro logic audio.
I'm running a dual core i5 MacBook with 8gb of ram, transcoding avi files is quick. Ripping DVDs takes a lot longer due to disc read speed, optical media sucks.
