Pumpkin muffins
Per muffin: 104 calories
Protein: 12 grams
Carb: 7 grams
Fat: 3 gram
Instructions
Preheat oven to 350 degrees
Spray 9 muffin tins with non-stick cooking spray or grease it with coconut oil.
Mix the following in no specific order:
3 scoops vanilla or strawberry protein powder
3/4 cup pure pumpkin
3 egg whites
1/2 cup oat flour
1/2 cup almond flour ******optional, you can just use another 1/2 cup of oat flour but it will have a bit more carbs
1/4 teaspoon salt
1/2 teaspoon baking soda
Cook for 12-15minutes, toothpick check to see if ready.
******You can add stevia or splenda, I didn't and it's already sweet enough for me
