Because car data system has limited bandwidth. All those cameras have on board processors (the majority is by a company called
MobilEye) that already sensed / processed the video image data usually on sensor (since CMOS has plenty of silicon real estate). You can't just try to solder a video out line.
The sensor on the location you talk about, could be night vision or just the rain/light sensor. Most new MY cars that are 50k would have more than 1 camera.. eg lane departure / blind spot sensors are just CMOS camera sensors.
