You should put the camera on a bench top power supply or better, power the camera in car on from a separate battery power source to see if you can replicate the problem.. Chances are your wiring is loose and experiencing intermittent voltage drops, causing the camera to restart. It depends on the car, if your car's suspension is hard, I won't use wire taps.. Either find a power source you can screw down, or
thermal wire strip a reliable power wire and solder a splice.
